Requirements: Minimum 10 years experience in high quality combined restaurant and banquet kitchen management of four or five star hotels/restaurants. Fluent in written and spoken English. Degree in Hospitality/Culinary Management or Equivalent. Preferably certified as a Food Hygiene Officer (NEA) or equivalent.
Responsibilities: Demonstrate a good working relationship with other departments with a high level of communication and co-operation in the interests of customer service and improvements in the working conditions of the hotel and department. Ensure that culinary operations meet hotel standards. Function as an active participating member of the Hotel’s F&B team. Responsible for the culinary improvements in various F&B outlets within the hotel. Demonstrate an understanding of all aspects of the kitchen, which relates to running the business. Maintain and improve F&B sanitation and food safety handling for the hotel in accordance with hotel Absolute Care Standards, International and Local requirements. Implement and maintain control measures to impact food costs, beverage costs, labour costs and operating supply costs.
